Preface

If you are looking for a by-the-book pressure canning cookbook this is probably not the book for you. This book is a compilation of years of canning and what I learned first from my mother and then other women who through the years invested their knowledge to me. It has lots of basics recipes with instructions and also a lot of more fast food meal type options and components to make a quick meal with add-ons like gravy and sauces. I am a firm believer that there is not only one right method of canning and while I am a big proponent of safety while canning, I am also a proponent of “your kitchen, your rules”. I am so excited to see a younger generation waking up to the fact that so many boughten cans of food are laden with all sorts of unhealthy additives that I have no desire to put in my body. The food I can in my own jars has only the necessary ingredients and I know exactly what they are. My hope is that you enjoy these recipes and the process of providing good shelf stable food for yourself and your family. It is such a rewarding feeling! Here’s to your health and happy canning!
